Detox Salad with Japanese Carrot & Ginger Dressing

A stunning rainbow salad with feel-good ingredients and a Japanese style carrot & ginger dressing to kickstart your detox.

Ingredients:

For the salad:
3 cups finely-chopped kale leaves
2 cups finely-chopped broccoli florets
2 cups finely-chopped red cabbage
1 cup shredded carrots
1/3 cup thinly-sliced spring onions
1 avocado diced

For the dressing:
1 large carrot, peeled and roughly-chopped
1/4 cup rice vinegar
2 tablespoons olive oil
1 tablespoon finely-chopped fresh ginger
1 tablespoon honey (or your desired sweetener)
1 tablespoon white miso
1/2 teaspoon toasted sesame oil

Method:

Add all salad ingredients together in a mixing bowl and toss.
For the dressing, add all ingredients to a blender and pulse until completely smooth. Season to taste.
