Grilled Peach, Pomegranate Spinach Salad | Recipe
A delightfully flavorful grilled peach, spinach, cauliflower and pomegranate salad recipe. Replace feta with vegan feta or vegan cheese for a plant based recipe.
Ingredients:
½ head Cauliflower – Cut into small pieces
100g Pomegranate seeds
50g Pecan nuts
20g Rocket
20g Dried Cranberry
50g Feta cheese
20ml Balsamic Vinegar
20ml Olive oil
Method
• Cut Cauliflower into small pieces and lightly fry in pan on medium heat
• Roast pecan nuts in oven until golden
• In a bowl, mix the rocket, pomegranate, pecan nuts, dried cranberry and crumbled feta together with the cooled cauliflower.
• Transfer into serving bowl and lightly drizzle with balsamic vinegar and olive oil.
