Quinoa Almond Brittle Recipe
A nutritious, crunchy quinoa almond brittle recipe, refined sugar free and vegan friendly.
Ingredients:
1/2 Cup raw quinoa (rinsed)
3/4 Cup Chopped Almonds
1/3 cup gluten free oats
2Tbsp Chia Seeds
2Tbsp Coconut Sugar
1/2 tsp Vanilla
Pinch of salt
2 Tablespoons Coconut Oil
100g Maple syrup
Method:
Mix coconut oil (melted), maple syrup, sea salt, vanilla and coconut sugar to make a syrup.
In a bowl, stir the quinoa, almonds, oats and chia.
Mix in the syrup.
Pour into a lined tray and allow to set in fridge for 4 hours.
