This delicious roast potato recipe makes for a simple and flavorful vegan recipe using some basic ingredients, that bring out a world of delightful flavors.
4 x Large organic potatoes – Cut into wedges with skin on
8 x Baby Heirloom or Organic Carrots – Whole
1 x Cup Leeks Thinly sliced
3 x Cloves of Garlic Crushed
1 x Tbsp Vegetable stock Powder
2 x Tbsp of Extra Virgin Olive Oil to Drizzle
100g Shredded Cabbage for garnish
Preheat oven to 190 degrees Celsius
Toss all ingredients and drizzle with olive oil – sprinkling in veg stock powder as you go.
Pop in the oven for 20-30min until potatoes and carrots from a golden crust.
