2 cup Brown sugar
1 ½ cup Sunflower oil
2 cups Rice flour
3 tsp Baking powder
3 tsp Baking soda
1 tsp Salt
1 cup Pecans
3cups Grated beetroot
1 tsp Xanthan gum
3 tbsp Cocoa powder
100g Dark chocolate
Pre heat the oven to 180 degrees
In a mixing bowl cream the sugar and oil until well blended.
Add the eggs one at a time whipping after each one.
In a separate bowl combine the flour, baking powder, baking soda, salt, xanthum gum, and cinnamon. Sift together.
Add the dry ingredients to the wet ingredients slowly until well combined.
Fold in very slowly the vanilla, pecans, grated beetroot and the chocolate.
Once well combined, pour into two baking tins (rubber ones) and bake for 30-40 minutes or until the cake tester comes out clean
