Sweet and Spicy Quinoa Hash

Ingredients
1 tsp coconut oil
1 pinch red pepper flakes
1/2 cup sweet potato, cubed
1/3 cup kale, chopped
1 garlic clove, minced
1 pinch of salt
1/2 cup of cooked quinoa
Method
In a skillet over medium heat, warm the coconut oil.
Add the red pepper flakes and sweet potato, then sauté for about 5 minutes.
Stir in the kale, garlic and salt. Sauté until kale has wilted, about 3 minutes.
Add the quinoa and heat through.
