Makes: 1 x 23cm Pizza
1 Pizza base (wheat or gluten free)
40g Shredded spinach
40g Sun-dried tomatoes chopped into small pieces
25g Calamata olives with the pips removed
120g Good quality mozzarella cheese
· Dust a large baking tray with flour
· Add the base to the baking tray
· Spread the base with tomato
· Mix the pesto and the mozzarella cheese together in a bowl
· Add the pesto mozzarella mix to the base
· Add the spinach, olives, and tomato.
· Sprinkle with oregano.
· Bake until the pizza is golden brown
