Baked Black Mushrooms with Raw Vegan Cheese Sauce

Mushroom steaks are a fantastically easy dinner to prepare. They taste really good with this vegan cheese source drizzled over them as they come out the oven. I am constantly looking for energy efficient foods to prepare, the mushrooms can easily be prepared in a solar cooker. Peak oil has come and gone and unless we learn to sustain on plant based foods naturally we are likely to be in for a rough ride.

Serves two

Ingredients

1 Cup raw organic cashew nuts
½ large organic red peppers
¼ cup water
2 tbsp. lemon juice
2 tbsp. nutritional yeast
1 tbsp. tahini
1 ½ tsp. Kalahari rock salt
1 clove garlic
2 tsp. onion powder

Add all the ingredients a blender and blend until smooth

For the Black Mushrooms

1 clove garlic
Black pepper
Kalahari rock salt

Rub the black mushrooms with garlic and drizzle some olive oil over each of them to coat them. Season with salt and black pepper, and bake at 160°C for about 20 minutes or until done.

Pour over the vegan sauce and serve
