Barley Mint Salad Recipe


500g Barley Pearled
2 Diced onions
4 Diced red peppers
½ cup Chopped Parsley
1 cup Copped fresh basil
¼ Cup fresh mint
Herb dressing
Black pepper
Sea salt
Lemon juice
Shredded mixed lettuce


• Cook the barley for about 40-50minutes. Be careful not to overcook it.
• In a mixing bowl combine all the ingredients including the cooled barley.
• Turn in the shredded lettuce
• Turn in the lemon juice, black pepper, salt and dressing
• Garnish
