Brown Rice Barley Salad Recipe

Serves: 4

Ingredients

200g Short grain Brown rice
180g Pearl barley
1 red onion, diced
2 Granny smith apples cubed
1 Stick celery thinly sliced
Handful flat leaf parsley chopped
Large hand full of washed rocket and roughly chopped
100g goats cheese feta

Method

1. Cook the rice and the barley in a two to one ratio or follow the instructions on the packet.
2. Combine the rice, barley, onion, cubed apple, celery and parsley in a big salad bowl.
3. Turn the rocket leaves through the mixture and sprinkle the crumbled goats feta on top.
4. Drizzle with dressing and serve

Dressing

Ingredients

¼ cup hummus
¼ Cup organic plain yoghurt
Fresh coriander leaves
Juice from one lemon
1tsp honey
Salt and black pepper to taste

Method

1. Combine all the ingredients in a jar and shake well.
