Cranberry Walnut and Chia Seed Spinach Salad With Lemon Balsamic
Ingredients
2 Cups of Organic Baby Spinach – washed and drained
1/4 Cup Walnut Pieces
1/4 Cup Dried Cranberries
1 tbsp Chia Seeds
1/4 tsp Black Pepper
1/2 tsp Nutritional Yeast
1 tbsp Lemon Olive Oil
1 tbsp Balsamic Vinegar
Method
In a medium sized bowl with a lid, add spinach, walnuts, cranberries, chia seeds, pepper, and nutritional yeast. Close the lid tightly and shake until the ingredients are mixed.
Transfer onto a large salad plate and drizzle on lemon olive oil and balsamic vinegar. Add more to taste, along with salt and pepper if you desire.
