Serves 6
Sweet summer pears, with raw hazel nuts (no need to roast them as they taste delicious raw) and gorgonzola cheese combine into a flavour sensation. You can replace the gorgonzola cheese with croutons if you want to stay away from dairy. This salad is easy to prepare, pears are in season and is perfect for an end of summer Sunday lunch. You can pre-prepare the ingredients and simply toss them together just before you ready to eat.
Ingredients
1/2 cup hazelnuts
6 baby tomatoes cut into quarters length ways
1 large spring onion
2 handfuls mixed baby lettuce1 tablespoon white wine vinegar
1 handful fresh rocket
1 handful fresh basil leaves
½ cup sunflower sprouts
2 Large juicy pears cored and cut into slithers
1/2 cup crumbled rich creamy gorgonzola cheese
Dressing
3 table spoon French mayo
2 table spoon lemon juice
2 table spoon olive oil
2 table spoon honey
¼ teaspoon crushed garlic
Salt and black pepper to taste
Combine all the ingredients in a mixing bowl and mix until well combined
