Skin-Boosting Salad

With omega-3’s in the seeds and nuts, Vitamin C in the spinach and vitamin A in the ricotta, this tasty salad is a skin saver!

Ingredients

100g baby spinach
5 rosa tomatoes, halved
50g Fresh Earth walnuts, toasted
50g Fresh Earth mixed seeds
100g ricotta, crumbled
Juice of 1 lemon
200ml olive oil
Salt and freshly ground black pepper, to taste

Method

Put the spinach in a serving dish and top with the tomatoes, walnuts, seeds and ricotta. Drizzle with the lemon juice and olive oil. Season and serve.
