Try this banting recipe for home baked cookies for the whole family. These irresistible cookies are perfect for gluten intolerance, celiac and health conscious individuals.

At Fresh Earth, we are always experimenting with alternative and health options to ensure we can all enjoy great food, without the damage to our bodies and planet.

These banting cookies are one of our favourite recipes:


2 cups Coconut flour
2 tablespoons Almond butter
200 g Butter
3 tablespoons Xylitol
2 tsp Baking powder
Sugar free dark chocolate (optional)


Pre-heat the oven to 200°

Mix butter, almond butter and Xylitol in a bowl until combined. Then add flour and baking powder mix well until everything binds together. You can use your hands to blend the mixture properly and ensure it is smooth.
Make balls by rolling them in the palm of your hand. The size can depend on how many you want to make.  Flatten with a fork.

Bake on a preheated oven 200° for 15 minutes or until brown.
Drizzle with sugar free dark chocolate if desired.
