Corn and Spelt Muffins

Chermoula Recipe

Makes: 6 muffins
Takes ten minutes to make and 15 minutes to bake


85g Whole meal spelt flour
85g Corn meal
1 ½ tsp baking powder
1 organic egg
15ml clear honey
150ml organic milk (you can substitute the milk with soya or rice milk)


1. Pre heat the oven 200°C. Lightly grease a six section muffin tin.
2. Sift the flour, corn meal and baking powder together into a mixing bowl, adding the spelt bran left in the sieve to the bowl at the end.
3. Beat together the egg, honey and milk. Make a well in the centre of the dry ingredients and add the egg mixture.
4. Gently stir until the mixture just comes together. Be careful not to aver beat because you will knock the air out of the muffins and they will not rise.
5. Devide the mixture between the muffin wholes in the prepared tin and bake the muffins for 12 – 15 minutes, or until they are well risen and golden.
