Red Pepper Gazpacho

Red Pepper Gazpacho


2.5 tbsp. olive oil
1.5 cups onion, diced
1 x tbsp. garlic, minced (about 3 cloves)
1 x cup whole tomatoes, peeled
2 x cups red peppers, roasted
1 x cup peppadews
3 x cup almonds, blanched
2/3 tsp. cayenne pepper
2 x tsp red wine vinegar
1 cup purified water
Salt and pepper to taste


• In a medium pan, heat two table spoons of olive oil over medium heat for 2 minutes.
• Add the onion and garlic and cook for 15 minutes or until onion is translucent.
• Transfer the onion and garlic to a blender and add all the other ingredients.
• Blend until ingredients are smooth and well combined.
• Season with salt and pepper.
• Serve chilled.
