Garlic Mousse

Garlic Mousse

Ingredients:

Makes 250g
45g Fresh Garlic, Peeled
185ml Olive Oil
25ml Fresh Lemon Juice
Pinch of Salt

Method:

Add garlic and salt to the blender and start blending.
Slowly add 50ml of olive oil and add the lemon juice 1 teaspoon at a time.
Continue adding the olive oil and lemon as indicated above until the consistence of ‘mayo’ is attained.
Dish into a glass jar, tighten the lid and put into the fridge.
(Use a teaspoon or less of your garlic mousse to add punch and flavour to any sauces you make from salad dressings, pasta sauces to even a delicious gluten free sarmie as a spread!)
