Red Pepper, Feta and Hummus Soup

Red Pepper, Feta and Hummus Soup

Ingredients

300g Fresh Earth Hummus
450g Roasted red peppers
Small Handful fresh coriander
½ tsp Smoked paprika
200g Feta cheese

Method

Roast 4 red peppers in the oven for 50 minutes.
Combine the hummus with twice the volume (600ml) of hot water in a large sauce pan.
Chop and seed the red peppers and add to the pan along with their juices.
Add most of the coriander, reserving some for garnish. Stir well and add salt.
Bring to the boil, partly cover the pan and reduce to a gentle simmer 5 minutes or until very hot.
Pour the pan contents into the blender and puree with paprika.
Return to the pan for 2 minutes to reheat.
Ladle into serving dishes and add strips of feta with a sprig of coriander to each.
Serve hot.
