Almond and Amaranth Granola with Spelt Flakes

Makes about 4 1/2 cups

Ingredients

1/4 cup honey
2 tablespoons organic sunflower oil
1 teaspoon pure vanilla extract
1 cup old-fashioned rolled oats
1 cup Spelt flakes
1/2 cup amaranth grain
1/2 cup slivered almonds
1 cup mixed dried berries

Method

Preheat oven to 160°C. Line a rimmed baking sheet with parchment paper.
In a large bowl, whisk together honey, oil and vanilla.
Stir in oats, spelt flakes, amaranth and almonds until evenly coated.
Spread on prepared baking sheet.
Bake about 30 minutes or until golden.
Stir in mixed berries and let cool completely.
