2 x cups cucumber, peeled and diced
2 x cups yellow bell pepper, diced
2/3 cup kale, stems removed and roughly chopped
2/3 cup celery, diced
1/2 cup basil, chopped
2 tsp. lemon juice
2 cups purified water
Salt and pepper to taste
• In a blender, combine all the ingredients, except the salt and pepper.
• Puree for 30 seconds or until smooth.
• Season with salt and pepper and blend briefly to combine
• Serve chilled
