Mango Acha Recipe


1/2 cup balsamic vinegar
1/4 cup raw honey
2 cloves garlic, finely chopped
2 teaspoons chilli powder
2 teaspoons curry powder
1 teaspoon organic ground cumin
1 teaspoon organic ground ginger
1 teaspoon organic yellow mustard seeds
1/2 teaspoon Kalahari rock salt
2 tablespoons extra-virgin olive oil
2 unripe organic mangoes, peeled and flesh cut into 5cm chunks


Place vinegar, honey, garlic, chilli powder, curry powder, cumin, ginger, mustard seeds and salt in a medium saucepan and heat to a boil over medium-high heat. Reduce heat to medium and simmer 5 to 6 minutes or until thickened and reduced, stirring occasionally. Remove from heat and whisk in oil. Stir in mango and set aside to let cool. Refrigerate at least 8 hours or overnight before serving.
