Papaya-Ginger Smoothie

Ingredients:

2.5 cups papaya cut into chunks

1 cup ice cubes

2/3 cup full cream Gourmet Greek Yogurt

1 tbsp ginger finely chopped

1 tsp Fresh Earth raw honey

30ml lemon juice

Fresh mint for garnish

Method:

Refrigerate papaya until very cold, at least 1 hour or overnight.

Blend papaya, ice cubes, yogurt, ginger, honey, and lemon juice in a blender. Add up to a ¼ cup of water, 1 tablespoon at a time, until the mixture is smooth and thinned to your desired consistency.

Pour into a 450ml glass and garnish with mint leaves.
