Toasted Brown Rice and Greens Recipe

Chermoula Recipe

Ingredients

• 1cup brown rice (will toast)
• 3 cups water
• ¼ t-spoon turmeric
• 1t-spoon salt
• Handful almonds
• Sprig of fresh mint
• Bunch rocket
• Stick celery
• 1 large carrot
• Lemon
• Good olive oil

Method

• Preheat oven to 180.
• Place almond on baking tray place in oven for +_ 15min or until almonds are toasted
• Add rice to big shallow pan or skillet, bring to a medium heat and with wooden spoon, ‘stir’ rice every 30/45 secs for about 3 to 4 minutes. Rice will start popping and start toasting.
• When rice has toasted, remove from pan, place in sieve and run under cold water.
• Add to pot with 3 cups cold water, salt and turmeric
• Bring to boil and then reduce to a medium heat.
• Cook until all the water has been absorbed.
• While rice is cooking….
• Find a nice bowl and prepare something fresh and green:
• Thinly sliced celery stick
• Cubed English cucumber
• Grated carrot
• Torn rocket
• Finely chopped mint and whatever fresh ingredients you enjoy eating.
• When rice is ready:
• Add as much lemon juice and olive oil as you feel, add crushed toasted almonds and mix through.
• If you have any bean dip left, this will go well with rice or can be mixed with greens
