Grilled Black Mushroom and Greens Recipe

Ingredients

• 4 giant black mushrooms ( woolies great for this)
• Salt
• 1 block no d cheese (chives or nut free)
• 1 big baby marrow
• Baby spinach
• Fresh rocket
• Fresh basil
• Quick dressing for greens:
• 3t-spoon lemon juice
• 3t-spoon olive oil
• ½ t-spoon salt
• 1 clove garlic

Method

• Preheat oven to 220
• With a moist clean cloth- wipe over surface of black mushroom, place mushrooms face up on baking tray and sprinkle with salt
• Place in oven for +-15min
• In this time prep salad dressing and greens:
• Salad dressing:
• Finely chopped garlic clove.
• Add olive oil, lemon juice, salt, and water – stir vigorously before using.
• Wash, dry and roughly chop baby spinach add to flat serving plate
• Wash and dry rocket and basil- tear and add on top of baby spinach
• Wash and fine grate baby marrow and add on top of herbs
• Drizzle greens with dressing.
• After +_15min remove mushrooms from oven leaving them on baking tray.
• Place oven on grill.
• Slice no d cheese into thin slices and place on mushrooms.
• Put mushrooms under grill and grill until no d cheese melts.
• Remove grilled mushrooms from grill and place on top greens
• Enjoy!
