Organic Roasted Curried Cauliflower Recipe

Serves 2-3


1 head of cauliflower, cut into uniform florets
2-3 tbsp. Ghee
2-4 tablespoons of curry powder
Sea salt
Freshly ground black pepper
Half a lemon
1/4 cup minced coriander leaves


Preheat the oven to 180°C putting the rack in the lower middle of the oven.
Put the florets in a bowl and toss them with a generous amount of ghee, curry powder, salt and pepper.
Place the cauliflower in a foil lined baking tray and cover it tightly with another sheet of foil.
Put the tray in the oven for 15 minutes then remove the top layer of foil.
Roast the cauliflower for a further 20 minutes, turning the cauliflower every 8 minutes until they are soft and brown in parts.
Plate the cauliflower and squeeze on the lemon juice and sprinkle on some coriander.
