Quick Tofu Salad Recipe

Ingredients

1 block tofu
1 small English cucumber
3Tbl spoon olive oil
1/2 red onion
2 tsp salt
1 lemon
1 stick celery
10g fresh rocket
10g fresh basil
1 sprig fresh mint
Salad greens

Method

Cube tofu into small feta cubs size pieces and add to mixing bowl.
Peel and fine grate cucumber and add to mixing bowl.
Cut red onion finely and add to mixing bowl, with squeezed lemon juice, olive oil and salt.
Gently mix the ingredients together helping the tofu absorb the flavours from the ingredients.
Cut celery into thin diagonal slices – add to mixing bowl.
Use whatever herbs you like, chopping finely, and add to mixing bowl.
Mix all ingredients together (and if you have time place the bowl in the fridge for 30 minutes.
Add your choice of salad greens to a salad owl and add tofu-mix. Enjoy!
