Tropical Chia Pudding
So simple to make! Here’s how: soak chia seeds in coconut milk and then mix in Greek yoghurt. Layer it in a glass with some tropical fruit and top with coconut. Boom. Healthy breakfast, snack or dessert!
Ingredients:
6 Tbsp. Chia Seeds
1 Cup Coconut Milk
1 Cup Greek Yoghurt
1 Mango, peeled & diced
1 Cup fresh pineapple, peeled and diced
2 Cups strawberries, hulled and diced
Shredded coconut (for serving)
Instructions:
Fold the chia seeds into coconut milk and refrigerate for at least an hour (I like to soak overnight).
Fold in yoghurt to chia seed mixture.
In glasses or jars, layer it as follows: strawberries, yoghurt mixture, pineapple, yoghurt mixture, then mango. Top with coconut and serve. Enjoy!
