Apple Pie Recipe

Ingredients
Pastry Ingredients
350g Rice flour
130g Spelt flour (sifted)
10g Salt
110g Fructose
210g Butter
1 Egg
5ml Apple cider vinegar
Water
15g Xanthum gum
Filling Ingredients
Thinly sliced peeled apples
165g Fructose
30g Butter
6g Ground Cinnamon
Method
Method for pastry
• Preheat the oven to 180 degrees
• In large mixing bowl, combine the flour mix, salt and fructose. Mix well.
• Cut in the butter and mix with your hands until the flour looks like breadcrumbs.
• In a small bowl combine egg, vinegar and a little water. Whisks together then gradually add the flour mix, stirring with a fork.
• Mix until dough forms a ball. Add more water if necessary.
• Allow dough to rest for tem minutes in the fridge before rolling out.
• Roll the dough onto a large chopping board wrapped in cling wrap.
• Place into large steel baking tray.
Method for filling
• Make sure your pastry is prepared in the baking tray
• While slicing the apple sprinkle a little lemon juice to stop them going brown
• Combine the cinnamon and the fructose. The amount of fructose depends on the sweetness of the apples.
• Mix the apples and the sugar together.
• Pour the mix into the baking tray and spread evenly
• Dot the top of the apple with the butter
• Top the apple with stripes of pastry in a criss-cross fashion
• Place on the lowest rack in the oven at 230 degrees for ten minutes then reduce the temperature to 175 degrees. Bake for 30 minutes; keep an eye on the bake while it is cooking.
