Cape Malay Potato and Cauliflower Curry Recipe
Ingredients
12 Medium Potatoes Large cubes
2 Large Cauliflower heads
3 Onion Diced
3 tbsp Crushed ginger
4.5 tbsp Crushed garlic
12 tbsp Sunflower oil
42 Curry leaves
9 tbsp Tomato paste Mixed into 3 cups of water
9 tbsp Cape Malay spice
6 Bay leave
3 tsp Salt
3 Can coconut milk
Tamarind tea
Method
ā¢ Heat oil
ā¢ SautĆ© onion until soft.
ā¢ Add ginger, garlic, and curry leaves and sautĆ© for a few minutes until onions are slightly brown.
ā¢ Add Malay spice and fry for a few minutes.
ā¢ Add tomato paste and mix well.
ā¢ Allow to boil and turn the heat down to a simmer.
ā¢ Simmer for ten minutes stirring regularly
ā¢ Add potatoes, bay leave and three cups of veg stock.
ā¢ Stir regularly
ā¢ Add tamarind tea and simmer for 18 ā 20 minutes.
ā¢ Add cauliflower and coconut milk.
ā¢ Add more water if necessary.
ā¢ Cook further until potatoes are cooked but firm.
