Cape Malay Potato and Cauliflower Curry Recipe

Chermoula Recipe

Ingredients

12 Medium Potatoes Large cubes
2 Large Cauliflower heads
3 Onion Diced
3 tbsp Crushed ginger
4.5 tbsp Crushed garlic
12 tbsp Sunflower oil
42 Curry leaves
9 tbsp Tomato paste Mixed into 3 cups of water
9 tbsp Cape Malay spice
6 Bay leave
3 tsp Salt
3 Can coconut milk
Tamarind tea

Method

ā€¢ Heat oil
ā€¢ SautĆ© onion until soft.
ā€¢ Add ginger, garlic, and curry leaves and sautĆ© for a few minutes until onions are slightly brown.
ā€¢ Add Malay spice and fry for a few minutes.
ā€¢ Add tomato paste and mix well.
ā€¢ Allow to boil and turn the heat down to a simmer.
ā€¢ Simmer for ten minutes stirring regularly
ā€¢ Add potatoes, bay leave and three cups of veg stock.
ā€¢ Stir regularly
ā€¢ Add tamarind tea and simmer for 18 ā€“ 20 minutes.
ā€¢ Add cauliflower and coconut milk.
ā€¢ Add more water if necessary.
ā€¢ Cook further until potatoes are cooked but firm.
