Tofu Cashew Curry Recipe

Ingredients
1.5 large onions finely chopped
2 tbsp. crushed garlic
20ml Cumin powder
6ml Cinnamon powder
15ml Turmeric
5 cm Ginger peeled and finely chopped
2 kg Butternut cubed
600g Cubed spicy tofu (see spicy tofu recipe)
2 x 400ml Coconut milk
1lt Vegetable stock
400g Cashew nuts
Handfull fresh coriander
Method
1. Fry the onion in a little oil in a large pot on medium heat. Add the garlic and
spices and stir for 1 minute.
2. Add the butternut, tofu, coconut milk and vegetable stock. Simmer, uncovered
and stir occasionally for 30 minutes or until the butternut is soft.
3. Top with cashew nuts and fresh chopped coriander.
