Chermoula is a marinade and relish used in Algerian, Libyan, Moroccan and Tunisian cooking. It is traditionally used to flavor fish or seafood, but it can be used on other meats or vegetables.
Ingredients
100g flat leaf parsley
100g fresh coriander
1 tsp. paprika
½ tsp. Cinnamon
2 tsp. ground cumin
1 tsp. chili powder
6 tbsp lemon juice
8 cloves garlic
125ml olive oil
125ml Sunflower oil
Salt
Freshly ground black pepper
Method
• Combine herbs, spices, lemon juice and garlic in a food processor.
• Add olive oil, slowly, while processing until a paste is formed.
• Season to taste.
