Basil Pesto and Goats Feta Omelette Recipe


1Tbsp ghee
3 free-range eggs
1Tbsp organic cream
2Tbsp basil pesto
20g goats feta
5g roasted sunflower seeds
alfalfa sprouts


Beat the eggs and the cream together
Heat the ghee in a heavy based frying pan (20cm)
Pour the eggs into the pan and cover with a lid immediately
Have the goats feta and basil pesto ready
Turn on the grill to max while the omelet is slowly cooking
Once the omelet has set then add dollops of basil pesto around the omelet
Sprinkle with goats feta
Remove from the pan and place under a grill for 2 minutes being carful not to overcook
Plate the omelet and sprinkle with sunflower seeds and alfalfa sprouts
Serve hot!
