Go Big or Go Back to Bed Breakfast Recipe

Serves: 1


2 Eggs (fried poached or scrambled)
2 Vegetarian sausages
2 Slices of tomato
40g Diced potato cubes
20g Spicy salsa sauce
2 Slices of toast
80g Sauté mushrooms


1. Coat the potato cubes with olive oil and sea salt and bake at 180 degrees for fifteen minutes or until the cubes are crispy.
2. Grill or fry the sausages.
3. Grill the two slices tomato in olive oil and a dash of Indonesian soya sauce.
4. Sauté the button mushrooms in a heated pan with vegetable stock powder dash of lemon juice and soya sauce. Set aside
5. Cook your eggs the way you want them.
6. Toast the two slices of bread.
7. Spread some hummus on your toast instead of butter.
8. Plate all the food and serve with a spicy coriander sauce. (see recipe)
